I don't get too excited over regular salsa with tomatoes. A little blah if you ask me! Here's a little twist in making some with fresh fruit. I used to make this with mangoes only but decided to throw in my left over papaya. Very easy and delish! Just a whole lotta chopping..... I keep changing the recipe as I go. It's more of what your palate prefers. I'm a wimp when it comes to spicy. Wish I wasn't! J looooves the chiles.....
Here it is as of now....
1 ripe chopped mango
1/2 ripe chopped papaya
1/2 chopped red onion
1 chopped red bell pepper
1 seeded & chopped serrano chile (or any chile your prefer)
2 or 3 juiced limes
3 minced garlic cloves
1/3 cup chopped cilantro
drizzle of olive oil
sea salt & pepper to taste
Serve with tortilla chips & some ice cold beer! Enjoy!
On a side note ~
Papaya = 1 Happy Stomach! :)
Tomato = 2 much acid :(
